Marshmallow Buttercream on Honey Cake
So, I’m not sure where it came from, but I’ve developed a strong need for a honey cake. I don’t recall ever having a honey cake, but I’m sure they exist. I began to consider how I might include it, and the idea of a honey cake with a honey glaze on top immediately occurred to me. I couldn’t get it out of my head, and my need worsened.
I next considered what buttercream would be tasty but also unique to match with the honey cake. Wow, marshmallow just appeared in my head. Yeah, I realize that’s an extremely sweet mixture, and if a really rich and sugary cake isn’t your style, this may not be for you. But if you’re already drooling, you’ve come to the correct spot.

I sweetened this cake with honey and brown sugar. It adds richness and depth to the taste. Be sure not to overbake this cake. Honey cakes appear to over-bake quickly and dry up if left in the oven for too long.
There’s also a honey glaze that goes on top of the cake before the buttercream. Just poke some holes in your heated cake with a skewer.
Finally, pour your honey glaze over it and thoroughly coat it.
As if that wasn’t enough to make your eyes glaze over, you’ll now cover it with marshmallow buttercream. The mixture is fantastic. Believe me.
Consider the fluffy marshmallow buttercream. Well, I’ll stop now since I’m drooling.
We (and by we, I mean largely me) had eaten all of it by the time I sat down to write this blog entry. Looking at these photos, I’m wanting it all over again and eager to create more. Look at how the honey glaze soaks into the cake. Yum!

Honey Cake with Marshmallow Buttercream

Ingredients
The Cake
- 2 cups regular flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1teaspoonsalt
- 3largeeggs
- a cup of vegetable oil
- 1 teaspoon vanilla extract
- 1 quart whole milk
- 1 cup sugar, granulated
- 1 cup light brown sugar, packed
- cuphoney
The Honey Glaze:
- cuphoney
- a cup of brown sugar
- butter cupunsalted
Marshmallow Buttercream
- temperature 1 cup unsalted butter
- 1 jar marshmallow cream
- 3 cup sugarcan add one additional cup if desired to thicken
- 1tablespoonmilkoptional
- 1 tsp vanilla extract
Instructions
For the cake:
- Preheat the oven to 350°F. Grease and flour a 13 x 9-inch baking dish.
- In a mixing basin, combine the flour, baking soda, baking powder, and salt.
- In a separate dish, whisk together the oil, vanilla, eggs, milk, honey, and sugars. Combine thoroughly.
- Mix in half of the liquid mixture to the dry ingredients until barely mixed. Mix in the second half for around 30 seconds.
- Bake at 350°F for approximately 25 minutes in a greased and floured pan. Begin checking at 20. Take care not to overbake. Honey cakes may rapidly overbake and become dry.
- Let it to cool for 10 to 15 minutes after baking. Poke holes in the cake with a wooden skewer. Pour the honey glaze over the cake and distribute it evenly. Let it to absorb completely. I let my soak for about an hour. Then spread marshmallow buttercream on top.
Honey Glaze:
- In a saucepan, combine the butter, brown sugar, and honey. Heat until the chocolate is melted. Let to cool somewhat before pouring over the cake.
Marshmallow Buttercream:
- In a mixer, combine the room temperature butter. Mix in the marshmallow cream and vanilla extract. Depending on how thick you want your buttercream, add 3-4 cups confectioners sugar. If necessary, add a tablespoon of milk to thin the buttercream.
