Key Lime Pie Cake Bars

Okay, I’m not much of a pie maker. I know, I know. I like pie, but I don’t make a lot of it. I’m more of a cake person (which comes as no surprise).Anyway, when I have a taste for pie, I simply walk out and purchase one.

So let me ask you a question. Have you ever purchased a pie and eaten the whole thing?Yes, I have. That’s rather horrible, isn’t it?So the key lime pie is the pie that I can’t stop eating. It’s like crack, I can’t get enough of it. (Not that I do crack or anything; I just wanted to clarify.) Anyway, I HAD to make a cake version of it, which is how the Key Lime Pie Cake Bar was formed.

The bottom layer of this cake is chewy and delicious, with a strong key lime taste. It’s created using a white cake mix, so it’s fast and simple to make.

The topping on this cake is similar to the filling of a key lime pie, and you will not be able to stop eating it. I couldn’t, I know. The creaminess of this topping complements the chewygoodness of the cake tier nicely. You may not want to share this with anybody.
