I adore these cake mix bars because they’re not only delicious (and irresistible), but they’re also simple to create and don’t need many ingredients.

If you need to throw together a fast treat, these are the way to go, and the flavor choices are limitless.

Melted Butter: For this recipe, I used unsalted butter. See my remarks on it in the tips and faq section below.

Vanilla Extract: This just enhances the taste.

small semi-sweet chocolate chips: I enjoy using small chips in this recipe since they don’t all sink to the bottom and the size is just right for these bars.

Jimmies in rainbow colors: These will be used to create the funfetti effect. Jimmies seem to perform better than little round rainbow sprinkles, which leak color quite a bit. (To get a closeup of the sprinkles I used, see the video in the recipe card below.)

Mixing Method for These Cake Bars:

Oh my goodness, the combining process for these things is ridiculously simple. In a mixing bowl, combine all of the ingredients (except the chocolate chips and sprinkles) and beat with an electric mixer.

Once that’s fully combined, stir in the chocolate chips and sprinkles by hand.

Do I have to use vanilla cake mix?

To keep the funfetti colors visible after baking, use vanilla cake, French vanilla cake, or white cake mix. You can, of course, use any flavor of cake mix and it will still taste delicious.

What type of butter should I use?

Unsalted butter is often used in baking. If you can’t locate it, salted butter will suffice. I haven’t tried this recipe using margarine, so I’m not sure how it would turn out.

Why do I need to use the rainbow jimmies? Why can’t I use the small round sprinkles?

You can use circular sprinkles, but I’ve noticed that they cause more color bleed.

When baking these, once you reach 20-25 minutes, take them out of the oven.

They will still be a touch soft, which is OK. If you bake them for too long, they will become hard and crispy as they cool.

Let these bars cool completely before cutting.

If you don’t let these bars get to room temperature before cutting them, they won’t be hard enough and you’ll have a mess on your hands. However, you do not need to chill them in the refrigerator; just place them on a rack to cool at room temperature.

  • 1 box vanilla cake mix (or French vanilla cake mix or white cake mix)
  • 2large eggs
  • cupmelted unsalted butter
  • 2teaspoonvanilla extract
  • 1cupmini semi-sweet chocolate chips
  • cuprainbow jimmies (use jimmies instead of circular sprinkles since round sprinkles might bleed color into your bars)

Instructions

  • Preheat the oven to 350°F. Spray a 139-inch glass pan liberally with nonstick cooking spray.
  • Combine the cake mix, eggs, melted butter, and vanilla extract in a large mixing bowl. Using an electric mixer, thoroughly combine all ingredients.
  • Mix in the small chocolate chips and sprinkles using a spoon or a rubber spatula. The batter will be quite thick.
  • Pour the batter into the prepared pan. Press the batter evenly in the pan using a rubber spatula or spoon. (It helps if you coat your spoon or spatula with nonstick spray to keep it from sticking to the batter.)
