I got the inspiration for this dish when reading an old church cookbook I acquired and noticed a recipe for Coca Cola Cake.
It sounded so good that I had to create my own version using Dr. Pepper, and I was very pleased with how it came out.
It’s really moist, and the fudge icing on top is absolutely delicious. This cake takes some time to make, but it is SO worth it.

A LOOK AT SOME OF THE INGREDIENTS FOR THE DR. PEPPER CAKE:
All-purpose flour: Because you’ll just be using all-purpose flour, there’s no need to run out and buy cake flour.
Unsalted butter: The great thing about this recipe is that you don’t have to wait for your butter to reach to room temperature. No worries, you’ll be melting it in a pot.
Mini marshmallows: Technically, I believe this recipe could be made without the marshmallows, but they do add sweetness and produce a very nice chewy top layer on the cake.
Dr. Pepper: Isn’t it a Dr. Pepper cake if it doesn’t have Dr. Pepper in it? As a result, this cake will not have a strong Dr. Pepper flavor. The Dr. Pepper is there to moisten it, as well as to provide sweetness and flavour. You’ll also use it in the fudge frosting.
Don’t be concerned about the cake tasting like buttermilk. It will not happen. Buttermilk in cakes contributes to the moistness and taste of the cake. (If you can’t get buttermilk, see the TIPS & FAQ section below for a substitute.)
MIXING METHOD FOR THE DR PEPPER CAKE:
The mixing process for this cake is a bit unusual, so go through the directions first, then do it one step at a time.
Essentially, you’ll be heating up some of the liquid components and pouring them over the dry ingredients before adding some more.
It’s not difficult, but it’s a unique manner of combining.
The frosting is also unique in that you will be heating a few ingredients before adding them to the confectioners sugar. But you don’t want to skip that section. That is what gives it the fudge-like texture.
This cake is particularly unique in that you will apply the warm frosting on the warm cake, so there will be no waiting for anything to cool.
TIPS & FAQs FOR THE DR PEPPER CAKE:
I haven’t tried it with coke, but I’m sure you could. I don’t see why that wouldn’t work.
Dutch cocoa powder and unsweetened cocoa powder are not the same thing. Dutch cocoa powder is not as acidic as the other, and since you will be adding baking soda to this recipe, you must use standard unsweetened cocoa powder rather than Dutch cocoa powder.
The finest results will come from using buttermilk, but if you can’t find it, you may be able to replace it. You may substitute 1 tablespoon lemon juice and 1 cup milk for each cup of buttermilk called for in the recipe. Allow it to settle for 5 minutes before proceeding with the rest of the recipe’s instructions. I haven’t tried replacing it in this recipe yet, but it should work.
This is a critical step in creating both the cake and the icing, so don’t omit it.
Read the directions first, then simply follow them one step at a time and you’ll be good.

Ingredients
For the cake:
- 2cupsall purpose flour
- 2cupssugar
- teaspoonsalt
- 1 cupsmini marshmallows
- cupunsalted butter
- 1 cup Dr. Pepper (save the remainder of the can or bottle)
- cupvegetable oil(or canola oil)
- unsweetened cocoa powder (rather than dutch cocoa powder)
- cupbuttermilk
- 1teaspoonbaking soda
- 1teaspoonvanilla extract
- 2large eggs
For the frosting:
- cupunsalted butter(1 sticks)
- 5tablespoonunsweetened cocoa powder
- cupDr. Pepper
- 4cupsconfectioners sugar
- 1teaspoonvanilla extract
Instructions
For the cake:
- Preheat the oven to 350 degrees.
- Vegetable shortening or butter should be used to grease a 139-inch baking pan. (This prevents the cake from sticking.)
- Combine the flour, sugar, and salt in a large mixing basin. Whisk until smooth, then fold in the small marshmallows and put aside. Don’t melt the marshmallows ahead of time. Add them to the dry ingredients in the order listed. During baking, they will rise to the top of the cake and make a beautiful chewy layer.
- Combine the butter, Dr. Pepper, oil, and cocoa powder in a medium saucepan.
- Bring to a boil, then pour over the dry ingredients and well combine.
- Stir the baking soda into the buttermilk before adding it to the batter.
- Mix in the eggs and vanilla extract until all of the ingredients are completely combined.
- Pour into prepared pan and bake for 35-40 minutes at 350 degrees.
- While your cake bakes, make your frosting since you’ll want to put it on the warm cake.
- When the cake is done, place it on a wire rack to cool for approximately 15 minutes before adding frosting to the warm cake.
For the frosting:
- Set out four cups confectioners sugar in a large mixing dish. Combine the cup of butter, 5 tablespoons of unsweetened cocoa powder, and the cup of Dr. Pepper in a saucepan. Bring the liquid to a boil before pouring it over the four cups of confectioners sugar in the mixing bowl. Mix in the vanilla extract well. Wrap in plastic wrap until ready to add to the cake. After the cake has been cooked, let it cool for approximately 15 minutes on a rack before pouring the warm frosting over it. Allow the frosting to harden up little before cutting and serving.
