Cookies with Pound Cake

Want to create the simplest cookies ever? So, here they are. There are only a few ingredients needed to make these pound cake cookies. They are soft and chewy, with a delicious vanilla flavor.

They are truly addictive when topped with cookie glaze.

The base of this recipe is a pound cake mix. I used Betty Crocker Pound Cake mix, but regular cake mix will also work. I used yellow cake mix and it worked well. However, my personal favorite is the pound cake mix.

I used vanilla bean paste in this batch of cookies. It’s my preferred method for adding vanilla flavor, although regular vanilla extract also works and is excellent. I also added a tiny bit of almond emulsion, which adds a nice subtle flavor.

Because it sets up, the cookie glaze is ideal for topping any cookie. You can stack your cookies and the icing will not run.

I don’t like royal icing. I just dont like how hard it gets. This glaze hardens, but not as hard as royal icing.

These easy pound cake cookies call for only a few ingredients. They come out soft and chewy with a wonderful vanilla flavor. Top them with cookie glaze and they’re truly addicting.

Cookie Ingredients

  • 1 package of pound cake mix (or any boxed cake mix)
  • 2largeeggs
  • cupoil(vegetable or canola)
  • 1 teaspoon vanilla bean paste or extract
  • a teaspoon of almond emulsion (optional)

Vanilla Cookie Glaze Ingredients

  • 2 CUP CONFETTI SUGARS
  • 3 tbsp milk or cream (add an extra tablespoon if needed)
  • 1 teaspoon vanilla extract or paste
  • 1 teaspoon corn syrup

Instructions

  • Preheat the oven to 350°F.
  • In a mixing basin, combine the dry cake mix.
  • Combine the eggs, oil, vanilla, and almond extracts in a mixing bowl. With a wooden spoon, thoroughly combine all ingredients. The mixture will be thicker than cake batter but not as stiff as traditional cookie dough.
  • Place by the spoonful onto a greased or nonstick cookie sheet. Cookies should be at least two inches apart. They will expand significantly during baking.
  • Bake for 10-13 minutes at 350°F in a preheated oven. The edging will be a bright golden brown color. The cores will still seem soft.
  • Cool for approximately 10 minutes in the pan before transferring to a rack to cool fully before adding the glaze.

Vanilla Cookie Glaze Instructions

  • Combine confectioners’ sugar, 3 tablespoons milk, vanilla extract, and corn syrup in a mixing bowl. Combine thoroughly. It will be thick at first, but continue to stir until completely incorporated before adding more milk, which might make it too thin. If the mixture is still too thick after mixing, add another teaspoon to tablespoon of milk. But, you want the glaze to be thicker so that it does not run off the cookies.
  • After the cookies have fully cooled, drizzle with glaze. Let the glaze to set before stacking the biscuits.

These cookies stay soft, just keep them in a covered container on your counter. They do not need to be refrigerated and they last the good part of a week.
