I’ve got a fun and quick cake recipe for you today. It’s a cake mix recipe, but we’re adding stuff to it so you’d never guess it began with a cake mix. It really tastes handmade and is that delicious.

This one is moist and delicious, and it’s quite simple to make. It’s one of those cakes that’s ideal for bringing to a potluck or a birthday party. It just travels well.

LET’S TALK A LITTLE ABOUT THE INGREDIENTS FOR THE FUNFETTI BUNDT CAKE:

WHITE CAKE MIX: As a basis, we started with a white cake mix. I chose a simple white cake mix rather a funfetti one because I wanted to be able to regulate the quantity of sparkles I put afterwards. While a funfetti cake mix might be used, I tried it with a normal white cake mix.

CREAM CHEESE: Cream cheese simply adds a layer of richness. It also contributes to the pound cake texture.

THE EXTRACTS: I used vanilla, almond, and lemon extracts in this recipe since they make it taste like a homemade cake. There isn’t enough lemon essence in there to give it a lemon taste. It merely adds a tinge of it, and when mixed with vanilla, it’s just delicious.

WHITE CHOCOLATE PUDDING MIX: It never hurts to have a pudding mix on hand, right? It gives a touch of additional flavor to the cake and enables it to have a pound cake texture.

RAINBOW JIMMIES: Instead of the small little circular sprinkles, use jimmies here. The color from those small spherical sprinkles will leak all over your cake batter. The jimmies will not do so.

EGG WHITES: Instead of whole eggs, use egg whites in this recipe to keep the base color of the cake white so the sprinkles shine out.

MIXING METHOD FOR THE FUNFETTI BUNDT CAKE:

This cake’s mixing process is simple and straightforward. That is, in essence, the dump it technique. Just combine the butter and cream cheese first, then add the other ingredients and stir well. Isn’t it simple?

Do I have to use the cream cheese?

If you can obtain it, I would recommend it. I haven’t tried this recipe without the cream cheese, so I’m not sure how it will turn out. Nonetheless, the cream cheese contributes to the cake’s pound cake texture.

Do I have to use the pudding mix? I can’t find the white chocolate pudding mix.

It’ll probably be OK if you don’t use it, but it adds flavor and helps give the cake a pound cake feel. If you can’t locate white chocolate pudding mix, you may substitute vanilla; it will only have a little yellow color to it.

Can I just use a funfetti cake mix instead of a white cake mix?

Perhaps, I simply wanted to be able to manage the number of sprinkles in my cake and have excellent quality sprinkles. I haven’t tried this recipe with the funfetti cake mix, but I believe it would work perfectly.

Make sure when measuring flour that you don’t pack the flour when measuring it.

To measure, spoon it into your measuring cup.

Be sure to use the rainbow jimmies and not the tiny round rainbow sprinkles.

The rainbow sprinkles will tint the cake batter. The jimmies, unlike the sprinkles, will not do this.

For the cake:

  • 1 pound unsalted butter (room temp)
  • 18 oz. cream cheese package (room temp)
  • 2 teaspoons clear vanilla extract (or regular vanilla extract if you dont have clear)
  • a spoonful of almond emulsion (optional)
  • 1 teaspoon lemon extract
  • 6 white eggs
  • a cup of vegetable oil (or canola oil)
  • cupmilk
  • cupwater
  • White chocolate instant pudding mix, 13.4 oz (dry)
  • a cup of all-purpose flour
  • cupsugar
  • 1 package of white cake mix
  • jimmies cuprainbows

For the Glaze:

  • 4 CUP CONFETTI SUGARS
  • 1 teaspoon vanilla essence, clear (or regular if you dont have clear)
  • cupmilk(or cream) (or cream)
  • a dash of salt

Instructions

For the cake:

  • Preheat the oven to 325°F. Oil and flour a 10-bundt pan well.
  • Combine the butter, cream cheese, and extracts until totally smooth.

    Mix in the remaining ingredients on medium to medium-high.

  • Include the rainbow jimmies.
  • Pour the batter into the prepared pan and level it out evenly.
  • Bake for 60-65 minutes @ 325°F.
  • Cool for approximately 20 minutes in the pan on a wire rack, then turn out onto the wire rack and cool fully before adding a glaze or powdered sugar.

For the glaze:

  • Combine the confectioners’ sugar, extract, milk, and sprinkle of salt in a mixing dish. Blend until smooth.
  • Examine the consistency. If it’s too thick to drizzle, add additional milk or cream by the spoonful until the appropriate consistency is reached. If the mixture is too thin, add another cup of confectioners sugar.
  • Drizzle over the cool cake.
